Blueberry Pancake & White Chocolate Caramel Cupcakes




For RSPCA Cupcake day I made two new flavours of cupcakes, as well as the always popular Cookies & Cream. Pictured are Blueberry Pancake Cupcakes which aren't actually made from pancake batter, but are more like blueberry and cinnamon muffins with maple icing. I then topped them with fresh blueberries and cinnamon sugar. They've been on my to-bake list for a long time and I'm glad I finally made some because they were even better than I'd hoped!


Secondly we have White Chocolate Caramel Cupcakes which I figured were a safe bet and definitely lived up to the promise. The caramel cupcakes were complimented by the fluffy white chocolate buttercream and then drizzled with caramel sauce - yum!

French Vanilla Cupcakes



These Very Vanilla cupcakes were made for a French themed morning tea and allowed me have fun brainstorming ideas and also be a bit silly. The fondant decorations are (right to left, top to bottom): snail/escargot, the Eiffel Tower, baguette and brie, Chanel logo, Louboutins, French flag, frog's legs, beret, bicycle (representing the Tour de France), artist's palette, champagne, and the Arc de Triomphe.

On a side note, I would like to thank everyone so much who contributed to a whopping $494.80 raised for RSPCA Cupcake Day!!

Beehive Cupcakes



I have wanted to make these Beehive Cupcakes for so long and I finally got the chance when I was asked to make some cupcakes for a friend's baby shower. These are the perfect cupcakes for when the gender of the baby is a surprise because they go great with a 'what will it bee?' theme, are gender neutral, and are cute as a bug! Yeah, I had to say it. These cupcakes were natural strawberry flavoured but of course would be very fitting as honey or honeycomb flavoured too. They had yellow vanilla icing swirled to resemble a hive and were finished off with little fondant bees.

Boy Themed Baby Shower Treats



August seems to be the month of baby showers! I recently attended a friend's baby shower and catered for two other showers that same weekend so it was a lot of fun. The first cake was baby boy themed chocolate cake with blocks spelling out 'It's A Boy' and whimsical blue butterflies up the side.


Next was a pastel blue and green themed shower, for which I made a two tiered vanilla bean cake with baby blocks, polka dots and a fondant bow tied around the base.


To go with the cake, I also made some vanilla bean cupcakes with pale green icing, a scattering of white sprinkles and matching blue fondant bows.


Lastly were the individually wrapped cake pop favours ($1.65 each) with blue polka dots and tied with a pale green ribbon!

How To: Sunflower Cupcakes



I admit it, I've been a bit slack with the blog posts lately, but I have heaps more coming up to compensate! The first of which are these sunflower cupcakes which I made for a bridal shower. If you have a browse on the internet you will be able to find so many sunflower cupcakes, most being made using a whole Oreo on top. The petals are then piped around the edge of the cookie and, unless done well or made from fondant, tend to turn out a little droopy. So this is my take on a modern classic.

The way I made them was by starting with vanilla cupcakes and then levelling the top with some green vanilla icing. This gave me a flat surface to work with when piping the sunflower to prevent any drooping problems, while also providing a background for the sunflower so that you can't see any cake between the petals. I coloured my remaining icing yellow, then scooped about two thirds into a piping bag fitted with a leaf tip*, laying it flat so that the icing went up the side of the bag (sorry, I should have taken a photo of this step!). To add some more depth I added a small amount of orange to the rest of the icing (just enough to make some subtle colour variation) and scooped that along the length of the bag, so that it was on top of the yellow. Then for the fun part, which was piping the petals! Once I had practiced my technique a little bit on some baking paper, I piped two layers of petals around the edge of the cupcakes. Instead of using a whole Oreo for the middle of the cupcake, I crushed up some Oreos using a food processor and then carefully scooped about a tablespoon of crumbs into the middle of the petals - done!

*If you don't have a leaf tip, you can improvise by using a large ziplock bag, reinforcing one corner with a few layers of tape, and cutting a V out from the middle.
